Honey-soy cod  


**serves 4-6

Ingredients:
  • 4-6 Cod Fillets (6-8oz each)
  • 4 Cloves Garlic, minced
  • 4 Tbsp Soy Sauce
  • 3 Tbsp Honey
  • 1-2 Scallions
A few notes on making this:
  • I think cod is such an underrated fish— it has a nice mild flavor and cooks up quickly for a perfect weeknight dinner. 
  • Add a little extra honey and soy sauce if you are making more than four fillets. 
  • Take care not to cook your garlic very long in the hot pan or it will burn.
  • Serve with ginger bok choy and rice for a complete dinner. Ready.
Directions:
  • Pat the cod fillets dry with paper towels.
  • Season with salt and pepper on both sides. 
  • In skillet, heat 2 tablespoons of olive oil on medium-high until hot. 
  • Add the seasoned fillets and cook 3 to 4 minutes on the first side, or until lightly browned.
  • Flip fillets and add minced garlic to the pan. (I like using this fish spatula.)
  • Cook, stirring constantly, 30 seconds to 1 minute, or until just fragrant (do not overcook your garlic, or it will burn and become bitter.)
  • Add the honey and soy sauce. 
  • Cook, occasionally spooning the sauce over the fillets, 1 to 2 minutes, or until the cod is cooked through and the sauce has thickened.
  • Remove from heat. 
  • Garnish with chopped scallions and serve with rice.
